Today on DelmarvaLife –

Dr. Suni Jani with Community Behavioral Health helps us understand suicide and gives us some insight on how we can help prevent someone from becoming the next victim. If you need someone to talk to, you can contact the National Suicide Prevention Lifeline at 1-800-273-8255. There are also resources on Delmarva that can help those going through a hard time. The Life Crisis Center in Salisbury has counselors available 24 hours a day, 7 days a week. The number to call to reach one of those counselors is 410-749-4357.

And we’re looking forward to stepping into the Kirby and Holloway Kitchen this afternoon. Yoga Instructor and Vegan, Kelcie Mahr, shows us how to put vegan twists on two popular dishes:
Stuffed Mushrooms and Chick’n & Waffles. You’ll find the recipes below. Enjoy!

Crabless Vegan Stuffed Mushrooms
  • 1 pound baby bella mushrooms
  • 2 14 ounce cans hearts of palm , drained & rinsed
  • 1/2 cup vegan mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon mustard
  • 2-3 tablespoons nutritional yeast
  • 1 teaspoon vegan worcestershire sauce
  • 1 tablespoon kelp granules (*see note for sub)
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon dried parsley (or 2 Tbsp fresh-cut)
  • 1 teaspoon garlic powder
  • Salt & fresh cracked pepper , to taste (note the sodium in Old Bay)
  • 1/2 cup green onion , sliced thin (green part only)
  • 1/2 cup panko breadcrumbs , + more for topping
Instructions
Preheat oven to 400° F. Grease a 9×13 baking dish.
Dry brush mushrooms and gently twist off stems. Using a small spoon, scrape out the brown gills. Place them in the baking dish and lightly season with salt & pepper.
Add the hearts of palm to a food processor and give 3-4 long pulses, until shredded. Don’t over process. The mixture should have a crab-like consistency.
To a large bowl, add mayonnaise, lemon juice, mustard, worcestershire sauce, nutritional yeast, kelp, Old Bay Seasoning, parsley, garlic powder, salt & fresh cracked pepper. Combine well.
Add the shredded hearts of palm, bread crumbs, and green onion. Combine well. Taste for seasoning and add more if needed.
Using a small spoon, stuff each mushroom cap and place in the greased baking dish (leave a small amount of room in between each mushroom). Sprinkle the tops with panko breadcrumbs and drizzle with oil if desired.
Place in oven and bake for 20-30 minutes, until heated throughout and lightly browned on top. Serve hot. (sprinkle with fresh-cut parsley, crushed red pepper, or vegan parmesan cheese, if desired).
Vegan Chick’n & Waffles
  • 2 cups of all-purpose flour
  • 2 cups of unsweetened soy milk
  • 4 tablespoons of vegetable oil
  • 2 teaspoons of baking powder
  • 1 teaspoon of pure vanilla extract
  • 1 pinch of salt
  • 1 package of Gardein scallopini
  • 2 cups of flour in a bowl
  • 2 cups of milk in a bowl
Instructions
Step 1: Dip chick’n scallopini into milk and flour bowl (repeat)
Step 2: Fry it in the deep fryer until crispy
Instructions for Waffles
Step 1: Grease the waffle iron with a drop of vegetable oil and turn it on
Step 2: Mix the flour, baking powder, and salt in a bowl
Step 3: Add the soy milk, vegetable oil and vanilla extract to the dry ingredients
Step 4: Whisk the mixture by hand until it forms into a smooth batter
Step 5: Pour the batter into the waffle iron according to its instructions
Step 6: Add chick’n and top with butter and syrup
